Scrocchiarella® is made with excellent Italian raw materials. Carefully selected flours from premium-quality grains, with natural Italian sourdough, T.O.P. extra virgin olive oil from Coppini Arte Olearia (Parma), and Presal®—a protected, iodised Italian sea salt whose valuable iodine remains stable during cooking.

80% water in the dough

Our dough is left to mature for 30 hours with sourdough starter and a very high amount of water. This super hydration is one of the secrets behind Scrocchiarella®’s crispiness.

Thanks to our Italian sourdough starter and an advanced process that faithfully replicates traditional artisanal methods, we are able to use low-strength flours while still achieving exceptional lightness, digestibility, and flavour. Scrocchiarella® always tastes freshly baked, with perfect crunchiness in every bite — even when it cools down.
