Scrocchiarella® is the fruit of over a century of oven culture. Everything begins in 1911 with Molini Besozzi Marzoli in Milan, one of the first Italian milling industries, reference supplier for the great names of industrial pastry. Over the years, this legacy grows and strengthens: in 1950 fresh yeast production begins in Casteggio, still today one of the most advanced hubs in Europe.
In 1992 Italmill® is born, reference point for baking and pizzeria. The transfer to Cologne in 2006 marks a turning point: it is here that the Scrocchiarella® dough comes to life, combining artisanal knowledge and industrial vision.
The name Scrocchiarella® was coined, and since 2012 it has been a registered trademark in Italy. For over two decades, it has represented a complete range of crispy pizza bases and sandwiches.
With the entry into the AB Mauri group in 2019, Italian heritage meets a global dimension.
In 2021, new investments in logistics and sustainability prepare the ground for the decisive step: in 2024, the production of frozen Scrocchiarella® bases in a dedicated facility. A contemporary product, born from a solid history. Made of hands, raw materials and passion.
