Our dough is left to mature for about 30 hours with plenty of water (80%).

Thanks to our Italian sourdough starter– lovingly nurtured and handed down through generations—, Scrocchiarella® embodies all the qualities that delight customers: lightness, crispiness, and digestibility.

With Besozzi Oro® flours, AB Mauri guarantees the experience of a mill born in Milan in 1911. With its expertise it ensures a selection of high-quality grains suitable for long leavening. These flours truly shine when paired with the distinctive organoleptic qualities of our natural Italian sourdough starter.

Thanks to this flour, Scrocchiarella® Riso Venere® guarantees an important supply of fibers, mineral salts and antioxidants, to satisfy the needs of an increasingly evolved, attentive and sophisticated clientele.

One of the ingredients that makes Scrocchiarella® bases truly unique is Coppini Arte Olearia Extra Virgin Olive Oil from Parma—an outstanding example of Italian excellence. Produced in Parma, at the heart of the Food Valley, this oil is the result of a carefully controlled supply chain that celebrates the local area, and is guaranteed by TOP (Product Origin Traceability) certification.
